Frozen Banana & Raspberry Pudding
I always make sure I have plenty of bananas. When there are a couple that are starting to get brown spots, I peel them, break into chunks and pop in a freezer bag, ready for instant pudding!
How: Blend frozen banana and frozen raspberries with milk (add slowly until required consistency achieved).
I also make this with the creamy top part from a tin of coconut milk (I leave tins in the fridge so it’s easy to separate) but this does give a more pina colada taste - still yummy.
Topped with a little bit of sugar-free jam for the kids. Bowls licked clean!
